I'm wondering if the following setup for a VPS-2 license would be any good:
    1. PHP 5.5 and ZO+ enabled (as opcache)
    2. Memchased (as datacache)
    3. Varnish (as HTTP cache)

Is this Overkill? Any other suggestions?

lsws is able to handle cache for static file by default. so Varnish can be spared.

Thanks. Is there any known issue with APCu (user cache without opcache) and litespeed?

I don't know about the compatibility but due to the way Litespeed works in deamon mode it's only safe to use APC user object cache if you trust all of your users as if deamon mode is activated all accounts would be able to access and edit each others objects.
